Chickpea and Celery Salad
Ingredients
- 2 cans (or 3 cups cooked) chickpeas, drained and rinsed
- 4 stalks celery, diced
- 2/3 c red onion, chopped
- 1 cup parsley, chopped
- 1/3 cup Greek dressing
Instructions
- In a large bowl, toss together chickpeas, celery, red onion and parsley
- Stir in enough Greek dressing dressing to lightly coat salad. Toss.
Notes
- you can substitute Greek dressing with olive oil and lemon juice to taste
