Chickpea and Celery Salad

Ingredients

  • 2 cans (or 3 cups cooked) chickpeas, drained and rinsed
  • 4 stalks celery, diced
  • 2/3 c red onion, chopped
  • 1 cup parsley, chopped
  • 1/3 cup Greek dressing

Instructions

  1. In a large bowl, toss together chickpeas, celery, red onion and parsley
  2. Stir in enough Greek dressing dressing to lightly coat salad. Toss.

Notes

  • you can substitute Greek dressing with olive oil and lemon juice to taste
