Butterbeer (Alcoholic)

Ingredients

  • 1/2 cup butterscotch sauce (use 1/3 cup for a less sweet version)
  • 4 cups apple cider
  • 1/2 cup bourbon, or more or less to your taste (optional)
  • 1 cup ginger beer OR sub ginger ale
  • 2 tbsp vegan butter substitute
  • 1/2 tsp cloves
  • 1/2 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 2 tbsp vanilla extract

Mise en place

  1. 1/2 cup butterscotch sauce, 4 cups apple cider, 1/2 cup bourbon
  2. 1 cup ginger beer
  3. 2 tbsp vegan butter, 1/2 tsp cloves, 1/2 tsp cinnamon, 1/2 tsp ginger, 2 tbsp vanilla extract

Instructions

  1. Combine the butterscotch sauce, apple cider and bourbon in a large pot and cook over medium heat until steaming, about five minutes.
  2. Stir in the ginger beer and cook another 1-2 minutes or until warmed through.
  3. In a small bowl, mix together the butter, cloves, cinnamon, and ginger, vanilla extract with a spoon until combined
  4. Remove from heat and stir in butter mixture. Serve.

Improvements to try:

  • increase bourbon to make stronger
  • add richness with either more butter or maybe a nondairy creamer of some kind.

Tasted very good, made a double batch for a party. Tasted like an alcoholic caramel apple cider. There was a slight bourbon flavor that wasn't overpowering, however it wasn't strong enough to really feel much (as a 6'2", 180 pound man). got similar feed back from smaller guests as well, consider increasing amount of bourbon. Caramel flavor and richness from butter that could be more pronounced, would like it to be richer but not sure if adding more butter would do the trick. Perhaps a vegan creamer. Butter + ginger ale gave it a nice head at first but dissipated after sitting on the warmer for a little while. Overall very good, might make minor tweaks next time.
